AZZ BREWING FUJINO is a small craft brewery nestled in the satoyama landscape of Sannogawa, Midori Ward, Sagamihara City, Kanagawa. Using water from the clear Sannogawa stream, we brew unfiltered and unfined, allowing the ingredients and the character of fermentation to remain as they are.

We hope to share each glass—born from the rhythms of this land, the passage of time, and the brewer’s own “session”—as a beer that quietly accompanies everyday moments.

Kai Yamaguchi

Kai Yamaguchi, owner and brewer of JAZZ BREWING FUJINO, has spent years facing both sound—through his work as a sound engineer—and ingredients and place—through hands-on experience in agriculture.

In the world of sound, the smallest difference can transform the entire impression. In farming, each day means working with elements beyond human control: weather, soil, and time.

His brewing is shaped by both sensibilities. While he carefully manages numbers and process, he also listens closely to fermentation and the changing expressions of each ingredient—making the choices that feel most right in that moment. In that sense, his brewing is an improvisational session.

Against the quiet backdrop of Sannogawa’s satoyama landscape, water, ingredients, yeast, and the brewer interact to create a single glass.

Kai Yamaguchi hopes to share these beers as something that gently accompanies everyday moments.

"About the clear waters of the Sano River"

Our brewing at JAZZ BREWING FUJINO begins with the clear stream that flows through the Sannogawa area of Midori Ward, Sagamihara City, Kanagawa. Moving slowly through a satoyama landscape surrounded by mountains, the water is remarkably clean—soft on the palate, with little harshness. Its gentle texture becomes the foundation of our beer, naturally bringing out the character of malt, hops, and yeast.

For us, water is more than brewing liquor. It is part of the “background”—holding the landscape and the passage of time within it. Using Sanogawa’s water is, to us, the very reason we brew in this place.

"About the material"

At JAZZ BREWING FUJINO, we respect the unique character of each core ingredient—malt, hops, and yeast—and bring together materials from different origins to create beers with depth and dimension. For malt, we choose blends that deliver a full, palate-wide flavor and a gentle sweetness that rises softly. For hops, we fine-tune the balance of bitterness and aroma through careful control of hop varieties and boil timing.

We also treat yeast as a key ingredient in its own right—whether it’s a West Coast (U.S.) strain or one with roots in a small Belgian brewery—each bringing its own distinct expression. And we sometimes add local elements such as yuzu juice or tea leaves, not to dominate, but to quietly support the profile, allowing aromas to emerge naturally within the overall harmony.

Nothing is meant to overpower the rest. Each element resonates with the others to form a single, complete flavor—this is how we choose to work with ingredients at JAZZ BREWING FUJINO.
