JAZZ BREWING FUJINO's Approach

JAZZ BREWING FUJINO is an ultra-small craft brewery founded in May 2018 with the support of the local community.
Guided by owner Kai Yamaguchi’s sensibility as a sound engineer and his background in agriculture, we approach fermentation and ingredients with sincerity—brewing in small batches through careful, hands-on craftsmanship.

Because our beer is handmade and produced in limited quantities, it can express the full character of malt and hops, the vibrant presence of living yeast, and a one-of-a-kind experience—like a live jam session led by the brewer. We invite you to enjoy it.

"About the clear waters of the Sano River"

Our brewing begins with the clear stream that flows through the Sanogawa area of Midori Ward, Sagamihara City, Kanagawa.
Winding slowly through a satoyama landscape surrounded by mountains, this water is remarkably clean—soft on the palate, with little harshness.

Its gentle texture becomes the foundation of our beer, naturally bringing out the character of malt, hops, and yeast.

"About the material"

We respect the unique character of each core ingredient—malt, hops, and yeast—and carefully combine materials from different origins to build depth and dimension in every beer.
For malt, we select blends that deliver a full, tongue-coating flavor with a gentle sweetness that rises softly.
For hops, we fine-tune the balance of bitterness and aroma through precise control of hop varieties and boil timing.

"About Unfiltered and Unfined"

We place great value on brewing unfiltered and unfined. By skipping filtration and fining, we keep as much of what fermentation creates as possible—capturing the living presence of yeast and the layered depth that comes from the ingredients.

Rather than prioritizing visual clarity, we choose dimension, texture, and a lingering finish. It’s also a choice to embrace the unique expression of each fermentation—instead of polishing every batch into uniform perfection.

Unfiltered and unfined craft beer

※ What “Unfined” Means
In the clarification process—removing haze from beer—unfined means we do not use fining agents. Instead, we allow time and gravity to do the work, letting solids settle naturally before separating them from the beer.

This approach is often used by natural wine makers, and it’s not uncommon to pair unfined with unfiltered methods as well. While filtration and fining can improve visual clarity and stability, they can also strip away some of a beer’s individuality—its aroma, texture, and depth.

That’s why we prioritize unfiltered and unfined brewing: to deliver the beer’s true aromas and flavors—and the living presence of yeast—as directly as possible, just as it is in the glass.

① Beer is naturally cloudy after fermentation

Right after fermentation, beer contains natural components such as yeast and proteins, so the liquid remains cloudy at this stage.

② Natural settling through time and gravity

Without using fining agents, we simply give the beer time—allowing yeast and other solids to slowly settle to the bottom of the tank under gravity.

③ Leave the sediment, transfer only the clear beer

We leave the settled sediment behind and move only the clear beer on top into another tank. No filtration is used.

This beer is all about balance: a full, malt-forward flavor across the palate, a clean hop bitterness, and the bright aroma from late hop additions with shorter boil times.
Fermented with a West Coast (U.S.) yeast strain, it delivers both an expressive lift and a deeper, more layered profile. Enjoy its firm body, complex hop depth, and a subtle hint of tea leaves on the finish.

We brew a seasonal limited-release beer about once a month. Using peak-season local produce, hops, and collaborations with other breweries, farmers, and creators, each batch becomes a true beer jam session—experimental by nature, and only possible at a small brewery like ours.

Most releases are made in very small quantities and won’t be widely distributed, so if you happen to spot one, we hope you’ll give it a try.

Brewed with a traditional German malt bill and a yeast strain sourced from a small Belgian brewery, this is a hybrid white ale gently scented with American hops and locally pressed yuzu juice.

Soft malt sweetness is wrapped in bright yuzu aromatics, layered with floral hop notes—an inviting, fresh profile that has become a favorite among many of our guests.
